green mountain salve

Honey and wax have long been used in massage treatments and to relieve the symptoms of arthritis and other aches and pains.

makes one 8 oz pot

1/2 cup balsam fir essential oil

2 tbsp rosemary essential oil

2 tbsp bay leaf essential oil

4 1/2 oz beeswax

in a medium saucepan over low heat, stir the essential oils together and add the beeswax. heat gently, stirring, for about 5 minutes until the wax has melted.

Pour the liquid salve carefully into a clean jar or tin and let cool.

honey and lemon toddy

The combination of honey and lemon is perhaps the best-known treatment for sore throats, as the antibacterial properties in honey help to fight the infection.

makes one toddy

1 tbsp cider vinegar

1 tsp lemon juice

1 to 2 tbsp honey

2/3 cup hot water

stir the vinegar, lemon juice and honey into hot water stirring until the honey is melted.

either sip or use as a gargle.

 

honey basil lemonade

makes two quarts

1 cup honey

1 cup lemon juice

1 handful lemon basil, leaves only

6 cups water

in a blender combine all ingredients, and process until the honey is emulsified in the juice. you can strain out the basil leaves before serving or leave them in — your choice!.

 

honey butternut squash with lime

makes 4 servings

1 small butternut squash

a little olive oil

honey to taste

seriously lime dressing (see below), optional

halve the squash. place cut side down on a sheet pan. drizzle lightly with olive oil, splash a few tablespoons of water on the sheet pan, and then bake in a preheated 375 degree oven until soft, about 45 minutes.

peel the squash and smash it, mash it or put it in a ricer, if you like. you are making a nice light, fluffy mashed-potato-sort-of-thing.

season with honey and salt to taste. depending on the size of your squash, i am going to say about 3 tablespoons of honey and 1/4 teaspoon of salt.

eat as is or pour some lime dressing on top.
